Potato wedges are a regular in our air fryer — crispy outside, soft inside, and the kids love them. The low-sodium version is simple: potatoes are almost sodium-free to begin with, so you just skip the salt and let rosemary and garlic powder do the flavoring.

Why No Added Salt Still Tastes Good
Potatoes have almost no sodium on their own, so the only job is building flavor elsewhere. Rosemary and garlic powder do that job, and a little olive oil helps the edges crisp up in the air fryer. If someone at home is managing sodium, this is an easy, naturally low-sodium side.

Ingredients (2 servings)
- 2 potatoes (about 400 g total, about 200 g per serving), cut into wedges with skin on
- ½ teaspoon garlic powder
- ½ teaspoon dried rosemary (or 1 teaspoon fresh)
- Black pepper, to taste
- 1 tablespoon olive oil (about 15 ml)
- Smoked paprika, a pinch (optional, for color, adds no sodium)
One serving (about 200 g potato) carries roughly 10–15 mg of natural sodium (USDA: raw potato is about 6 mg per 100g) — almost nothing. With zero added salt, this is a home-style side that fits a low-sodium, DASH-style eating pattern.
Steps
- Wash the potatoes and cut them into long wedges with the skin on. Soak in water 10 minutes to draw out starch, then drain and pat dry with paper towels.
- In a bowl, mix garlic powder, rosemary, black pepper, and olive oil. Add the wedges and toss to coat.
- Preheat the air fryer to 200°C (390°F) for 3 minutes. Lay the wedges in a single layer.
- Air fry 18–22 minutes, flipping once halfway, until the edges are golden and crisp.
- Sprinkle with a little smoked paprika for color, and serve.
Tips
- For extra crunch: pat the wedges completely dry before cooking, and use a touch more oil for better browning.
