Our family always keeps chicken breast on hand — cheap, high-protein, and naturally low in sodium. The problem most people hit is dry, tough meat, but the air fryer actually solves that: high heat sears in the juices, and we flavor with just lemon, black pepper, and garlic — no salt at all. This lemon pepper version is one I make two or three times a week; marinate, toss it in, and in about fifteen minutes you’ve got tender chicken on the table.
If you’re managing sodium with your family — say your doctor suggested cutting back — chicken breast is a very safe choice. It’s naturally low in sodium, and it tastes fine without added salt.
Why it works for a lower-sodium table
- Chicken breast is naturally low in sodium to begin with; you don’t need salt to make it taste good.
- We use lemon, black pepper, garlic, and a little oil for flavor — not salt.
- One serving (about 150g chicken breast) carries roughly 70–100 mg of natural sodium (USDA: boneless skinless raw chicken breast is about 45–66 mg per 100g, varying by cut and brand). With zero added salt, that’s far below a marinated or deli chicken breast.
If you need to limit sodium, it’s best to follow your doctor’s advice on what fits your plan.
Ingredients (2 servings)
- 2 boneless skinless chicken breasts (about 150g each)
- 1 lemon (zest + juice of half)
- 2 garlic cloves, minced
- 1 small sprig fresh rosemary or thyme (optional)
- 1 tablespoon olive oil
- Black pepper, to taste
- Smoked paprika, a pinch (optional, for color, adds no sodium)
Steps
- If the breasts are thick, slice horizontally into two cutlets or pound to an even thickness — this cooks evenly and stays juicy. Pat dry with paper towels.
- In a small bowl, mix olive oil, lemon zest, lemon juice, garlic, black pepper, and herbs into a marinade.
- Brush or rub the marinade over both sides of the chicken; marinate 15–30 minutes (skip if you’re in a rush, but marinating makes it more tender).
- Preheat the air fryer to 190°C (375°F) for 3 minutes. Place chicken in a single layer (don’t stack).
- Air fry at 190°C for 12–15 minutes, flipping once halfway, until the center reaches 74°C (165°F) and the inside shows no pink.
- Rest 3 minutes before slicing, squeeze over a little lemon, add fresh-cracked black pepper, and serve warm.
Tips
- Chicken breast dries out fastest when overcooked: pull it at 74°C; residual heat finishes it.
- For more flavor: stir a teaspoon of salt-free Dijon mustard into the marinade.
- Easy side: roast broccoli or bell peppers in the same basket (no salt either) for a one-appliance main and vegetable.
