Got leftover cooked chicken and not sure what to do with it? A quesadilla is the fastest fix—two tortillas, a layer of cheese, 10 minutes in the air fryer, crispy outside and stringy inside. Our air fryer chicken tacos also use ready chicken; this one is even easier—no cooking required.
Why the Air Fryer?
Pan-frying quesadillas easily burns one side while the other stays pale. The air fryer heats from both top and bottom at once, so the tortilla bubbles up golden and even, the cheese melts just right, and you’re not stuck watching the heat.
Ingredients (serves 1–2)
- 2 flour tortillas (medium)
- ¾ cup (about 75g) shredded cheddar or Mexican blend cheese
- ½ cup shredded cooked chicken (rotisserie or leftovers both work)
- Optional: corn kernels, diced bell pepper, a little black pepper
Steps
- Lay one tortilla flat. Sprinkle cheese over half, add the chicken and any optional toppings, then a little more cheese on top (cheese acts as the “glue”).
- Fold the tortilla into a half-moon and press gently.
- Line the basket with parchment, place the half-moon quesadilla in, don’t stack.
- Air fry at 190°C (375°F) for 6–8 minutes. Pull out at the 4-minute mark and flip so both sides turn golden and crisp.
- Let it rest 1 minute before cutting so the cheese doesn’t run everywhere.
Tips
- Don’t pile cheese to the edge or it melts onto the basket—parchment mostly solves cleanup.
- A flat spatula flips better than tongs here. Making two? Do them in batches, don’t cram.
