A lot of people think you have to buy rye at a bakery, but your bread machine handles it just fine. The one thing to know: rye flour drinks up liquid fast, so you need to give it enough water.

Ingredients
- Warm water (about 105°F / 40°C) – 1¼ cups
- Bread flour – 2 cups
- Rye flour – 1 cup
- Butter – 2 tbsp, softened and cubed
- Sugar – 1 tbsp
- Salt – 1½ tsp
- Active dry yeast – 2 tsp
- Caraway seeds – 1 tsp (optional, traditional flavor)
Step by Step
- Add ingredients in your machine’s recommended order: pour in the warm water, add the butter, then the flours (rye + bread flour mixed). Make a small well in the flour for the yeast; keep salt and sugar in opposite corners so the yeast doesn’t touch them directly.
- Select the Whole Wheat cycle (rye flour is low in gluten, so a whole-wheat program kneads and rises it more thoroughly). If your machine has no whole-wheat setting, use Basic, 1.5 lb, Medium crust.
- After 5 minutes, lift the lid and check the dough: it should form a soft ball, slightly tacky but not sticking to the walls. Too dry? Add 1 tbsp water. Too wet? Add 1 tbsp bread flour.
- When the cycle ends, remove the loaf right away, take it out of the pan, and cool at least 30 minutes before slicing.
Tips
- Rye flour has almost no gluten – you must blend it with bread flour for structure. Pure rye will collapse.
- Use 2–3 tbsp more liquid than you would for a plain white loaf; rye is thirsty.
- Caraway is the soul of European rye bread. Skip it if you don’t like it, but don’t swap in a random spice that might clash.

Q: Why is my rye bread so heavy and dense? A: Rye is naturally denser than white bread. For a lighter loaf, cut the rye flour to ¾ cup and bump bread flour to 2¼ cups.
Q: Can I use all rye flour? A: Not recommended – pure rye has no gluten and will spread into a flat disk the machine can’t save.
